This exciting series will bring culinary visionaries to the resort’s renowned dining venues, where they will create immersive dining experiences for guests. Each chef will bring their distinctive style and culinary artistry, offering a taste of their unique influences in a tropical setting.
Chef Theodor Falser: A Taste of the Dolomites (1st – 5th March 2025)
Michelin-starred Chef Theodor Falser will be the first to showcase his craft. Known for his focus on nature-inspired cuisine, Chef Falser emphasizes the use of pure, regional ingredients. At JOALI’s Bellinis restaurant, guests will enjoy dishes such as Tagliolini with Black Truffle, Butter-Poached Lobster with Caviar, and Braised Veal Cheek with Berry Sauce. For this limited-time residency, Chef Falser will offer a wine-paired set menu featuring flavours from Italy’s Dolomites region. Drawing from his roots in South Tyrol, the menu will include alpine herbs and seasonal ingredients, transporting guests to the mountains of northern Italy. Bellinis will also feature a temporary design collaboration with Aquazzura Casa, showcasing botanical elements and lush greenery inspired by 18th-century Chinese porcelain.
Chef Takagi Kazuo: Japanese Excellence Meets Peruvian Passion (14th – 21st March 2025)
From 14th to 21st March, Chef Takagi Kazuo, a master of Kyo-ryori (Kyoto cuisine), will take over the kitchen at Saoke, JOALI Maldives’ signature overwater restaurant. Chef Takagi is celebrated for his meticulous approach to traditional Japanese dining and his ability to bring together bold flavours. During his residency, he will offer a special set menu blending the finesse of Japanese cuisine with the vibrant influences of Peruvian flavours, known as Nikkei cuisine. Dishes like Sumiyaki Charcoal Grilled Black Cod and Yuzu Beef Roll will highlight the delicate interplay of textures and seasonal ingredients. Guests will also have the opportunity to experience a curated sake journey, featuring rare and premium labels such as Dassai Beyond and Shirataki Seven Junmai Daiginjo, each chosen to complement the flavours of the evening.
Chef Alex Webb: British Flavours with a Playful Twist (17th – 23rd April 2025)
Chef Alex Webb, winner of MasterChef: The Professionals 2020, will return to JOALI Maldives in April for an exciting series of dynamic dining experiences. Known for his innovative and playful approach to British flavours, Chef Webb will offer dishes such as Fire-Roasted Scallops with Foie Gras, Wagyu Beef MB9 Fillet, and Smoked Tiger Prawn Tartare. Each course will be paired with premium wines, offering a curated journey through distinguished old-world and new-world vintages. Chef Webb’s return to JOALI promises to deliver a memorable culinary experience, full of creativity and expertly sourced ingredients.
A Champagne-Infused Culinary Experience
In addition to the visiting chefs, JOALI Maldives will host an exclusive Champagne Devaux Dinner on 1st March 2025. Held in the peaceful Mura Garden, this event will feature a contemporary Italian five-course menu, carefully designed to pair with the exquisite champagnes of Devaux. Guests will enjoy pairings such as Foie Gras Ravioli with Truffle Sauce, complemented by the 2008 Devaux D Millésimé Brut, and Wagyu Cuberoll MB9, paired with the 2019 Devaux Coteaux Champenois Rouge. This refined dinner experience offers a chance to indulge in both exceptional cuisine and Champagne.
