Viktoria Fuchs, following the legacy of her renowned forefathers, is a distinguished member of the elite Jeunes Restaurateurs and manages the kitchens at Spielweg. There, she crafts an inventive menu featuring wild game and herbs sourced from the Black Forest. The family's cheese factory keeps an age-old craft alive, using milk from Hinterwälder cows that graze at an altitude of 1,000 meters. In support of local nature parks and farms, Viktoria has also introduced Spielweg Gin, refined with juniper, berries, mountain herbs, and lemon peel from the Black Forest. Her book, "FuchsteufelsWILD," a recipient of the German Cookbook Award, pays homage to Spielweg's longstanding tradition of game cuisine.
During your stay at The Ritz-Carlton Maldives, Fari Islands, anticipate an evening with Viktoria featuring a menu that includes Cod Ceviche with coriander, Wild Boar Dim Sum, Pink-roasted Saddle of Venison with mango, Carrot Cake with physalis, passion fruit, and sour cream ice cream, concluding with a classic slice of Gugelhupf served with Spielweg Gin. Held in the resort's wine cellar, guests also have the opportunity to partake in a tasting class featuring sliced mountain cheese from Spielweg's smoking chamber, along with Coppa and Beef Ham – meats cured for two months and then dried with noble mold culture.
