This coming September, the pristine island of Maamunagau in Raa Atoll is preparing to host UK-born Chef Nelly Robinson who will be taking a culinary residency at the resort from 1-4 September 2023. In recent years, Intercontinental Maldives has served as the host for a number of celebrated chefs and Chef Nelly Robinson is the latest addition to its growing portfolio of culinary collaborations.
A household name in the Australian culinary scene, Chef Robinson is no stranger to the critiques of The Guide Michelin and Gault & Millau, putting together innovative dishes and local hooks in his well-accolated restaurant ‘NEL’ in Sydney. His menus showcase the freshness of local ingredients and reminisce over his extensive travels, passion, and childhood memories. Changing every 11 weeks, gourmands dining at his establishment can broaden their culinary voyage with each visit.
Chef Robinson found his footing in the industry at the young age of 15 when he started working under esteemed chef Nigel Haworth at the Michelin-starred restaurant, Northcote Manor in the UK. In his early years, he learned to appreciate local and seasonal ingredients – a trait he would carry with him throughout his culinary career. At 22, he was appointed head chef at Stanley House and opened ‘NEL’ at the age of 29 after shifting to Sydney, Australia.
This autumn, Chef Robinson will bring his creative and boundary-pushing cuisine to the stunning dining venue, The Lighthouse of Intercontinental Maldives. During his residency, epicureans can look forward to eclectic and contemporary creations delivered against the beautiful background of the Indian Ocean. His renowned plates leave plenty of room for imagination and anticipation and dishes such as Kingfish Firebark, Wildfire Spiced Barramundi, or Chef Nelly’s unique take on Kedgeree will seamlessly blend with the ocean-inspired settings of the luxurious resort.
Apart from these creations, Chef Robinson will also be integrating several vegetarian options into his sumptuous menu set at The Lighthouse. Moreover, guests can also tantalize their tastebuds with a plethora of island-inspired creations available as a la carte options and sample a well-curated tasting menu that will indulge the palates of even the most discerning diners.
