The pioneering wellbeing island retreat, JOALI BEING has invited Patrick Godborg, Head Chef of the renowned ‘Restaurant Radio’ in Copenhagen, Denmark for a culinary residency from 16th-22nd March 2023. During his residency, Chef Patrick hosted two immersive workshops and one unique Dining Experience for guests at JOALI BEING.
Thanks to a friend, Chef Patrick started culinary school through which he found his passion for cooking. From a young age, he has always shown creativity in the kitchen and delighted in the concept of elaborating dishes and giving people a good time, which encouraged him to move forward in the field professionally. As a student, Chef Patrick worked in several Michelin-starred restaurants including the world-famous Noma – which has three Michelin stars to its name and was awarded ‘The World’s Best Restaurant’ title four times by S. Pellegrino & Acqua Panna.
After coming to realize his talents in the culinary arts, Chef Patrick set out his career goals with aspirations to try out for Bocuse d’Or, win Best Restaurant in Denmark and have a Michelin star. Fast-forward to the present, he can proudly say that he has achieved all these goals in his career. As for his vision, Chef Patrick strives to display cooking concepts that are also equally sustainable. Aligning with this vision, the products he uses for his dishes are 70% organic or biodynamic.
At JOALI Being, Chef Patrick crafted an exclusive dining experience for guests which brought the flavours and aromas of Scandinavia to the Indian Ocean archipelago in the form of a 5-course gastronomical affair. Some of the dishes featured in the cuisine include traditional Danish cream puffs infused with local ingredients to support a better sleep cycle and Nordic-style sustainable fish served with pumpkin.
In addition to this, Chef Patrick also hosted two interactive workshops during his time at the resort. One of which was designed for the local community. For this workshop, JOALI BEING invited twelve 8th & 9th graders from Maduvvaree School to the resort where they were enlightened about a sustainable and organic cooking concept by the Chef. The second workshop was curated to celebrate World Sleep Day and brought sustainability and wellbeing to the table under the mind pillar. The workshop was held also in collaboration with JOALI BEING’s Executive Chef, Richard Siahaan.
Since its inception, JOALI BEING has demonstrated an unwavering commitment to the wellbeing and progress of local communities. The resort has made its top priority to support and empower local communities and facilitated many events and opportunities under this aim. This includes creating multiple hospitality internships to inspire the next generation and hosting virtual educational sessions for university students on International Women's Day among others.
