Vincenzo's first head chef position was at London's renowned Dalla Terra Wine restaurant. He oversaw menu development, daily signature dishes, and event catering operations at the award-winning Lardo.
After that, Vincenzo worked as a senior sous chef at Capri Court, Shangri-La Hotel & Resort in Muscat, Oman, where he worked alongside Marco De Vincentis, a three-time Michelin-starred executive sous chef. Vincenzo worked at one of the best restaurants in Ras Al Khaima, Azure, before joining Grand Park Kodhipparu, Maldives, where he was inspired by his passion for Italian cuisine and flavors.
“Chef Vincenzo’s approach to culinary journeys is quite close to my heart, and it gives me great pleasure to welcome him to the team. We are excited to work together to find a nature inspired ‘recipe’ pun-intended – to improve how our guests experience the culinary experience we curate for them.” Expressing his enthusiasm over the new recruit is Raffaele Solferino the General Manager of Grand Park Kodhipparu.
