Born and reared in Ipoh, Malaysia, Chef Nitthiya Nathan understood from an early age that he wanted to be pursue the field of culinary. He would spend his days after school or during the holidays helping his mother at the school canteen, where most youngsters his age would be playing with their friends.
After graduating with a Diploma in Kitchen Department Operations from Taylor’s and Sunway College, Chef Nathan made his way to Sunway Lagoon Resort in 2002, where he worked at an Italian & French restaurant and was trained by an Italian chef. It was there that his love of food began. The Italian Chef occasionally tasked him with developing new dishes for tactical promotions which resulted in many compliments by guests!
In his spare time, Chef Nathan worked as a support cook for the culinary team competing in contests where he observed the other contestants and hone his cooking and presenting skills. It didn't take long for his seniors to notice and encourage him to compete in international tournaments! It was not about winning for him, but about the experience and knowledge he got from his fellow cooks.
The next stop was Singapore, where he began working at the Plaza Market Café at Raffles The Plaza, which is noted for its Peranakan food. Chef Nathan also received cross-training at Jaan, a fine-dining restaurant recognized for its originality and ingenuity, as well as Prego Italian Restaurant, where he is all too familiar with the cuisine. Chef Nathan rose through the ranks of the culinary world, eventually becoming the Assistant Head Chef of Capri by Fraser in Singapore in 2015!
Moreover, Chef Nathan packed his bags and flew to Seychelles in 2021, where he displayed Malaysian and Singaporean food to foreign and local customers at Trader Vics in The Story Hotel, which placed Top 10 on TripAdvisor's list of restaurants in Mahe!
