From the 13th–18th of February, Chef Patron, Tom Sellers of London’s 2 Michelin-starred Restaurant Story will be curating an exquisite pop-up at Beach Shack, serving guests an extravagant 6-course literary-inspired menu. During his time, he will also be sharing an evening with the guests, reading from his best-selling book ‘A Kind of Love Story’. The book captures the behind-the-scenes story of life in a world-class Michelin-starred restaurant and allows guests to glimpse the truth behind his brilliant creations and the visionary mind of one of the original chefs of the 21st century.
Chef Sellers perfected his culinary talents alongside gastronomical mavens including Tom Aikens in London, Thomas Keller of 3 Michelin-starred Per Se in New York and Rene Redzepi of the esteemed Noma in Copenhagen, all before reaching 21. A luminous presence in the British culinary scene, Sellers opened his Restaurant Story in 2013, which won its first Michelin Star during the same year.
His Restaurant Story delivers a changing seasonal tasting menu which is celebrated for incorporating character, playfulness and ingredient-led philosophy into food as he combines fine dining with forward-thinking and casual restaurant culture. His culinary creations are known to break convention and reflect his personal journey through food concepts, which has won him enormous critical and public acclaim.
During his residency at The Ritz-Carlton Maldives, Fari Islands, Chef Sellers and his team will conquer the Beach Shack for five days, presenting a decorated menu inspired by stories and ingredients from London to the Maldives. Among the featured dishes include a Tuna Tart, reminiscent of Sellers’ time in New York and his favourite Oreo cookie. The dish is reimagined as a savoury snack, serving his own version of the creation.
Other courses whipped up by the chef include a Maldivian Reef Fish with Plum Ponzu and Kaluga Caviar, a crudo that was inspired by Head Chef, Daniel Khoury who hails from Peru, Maldivian Lobster Ragoul with Corn, Mushroom and Lobster Cream, reflecting on his signature pop-up experience ‘Story by the Sea’ in Cornwall. Adding to these delectable dishes are Red Snapper with Saffron, Mayonnaise, Soffritto, Red Pepper Fish Sauce and Sauce Vierge, drawing inspiration from Thomas Keller’s ratatouille dish. The dish reminds Sellers of his younger days as an 18-year-old apprentice and recalls the craftmanship that is fueled into the dish.
The magnum opus of the menu will undoubtedly be the Chocolate Mousse, Chocolate Potato Cake, Fudge, and Baked Potato Ice Cream which will tickle the fancy of all sweet tooths. The closing dish will be the Manni Oil of Life, a celebratory dish of Restaurant Story and one of the world’s finest olive oil producers.
