Chef Darshan is an advocate of fresh, local ingredients and fits right along the lines of Amilla Maldives’ sustainability philosophy. Born in Tokyo, Chef Darshan has his roots in Sri Lanka as well. Since he discovered a love by the grill, Chef Darshan has not looked back. He opened Nihonbashi in Colombo to great acclaim in 1995 and Ministry of Crab in partnership with celebrated Sri Lankan cricketers, Mahela Jayawardena and Kumar Sangakkara, in 2011.
