Botanica by one of Australia’s most respected and influential chefs, Brent Savage, has opened at luxury, award-winning resort One&Only Reethi Rah.
The restaurant will use ingredients harvested from One&Only Reethi Rah’s gardens, cooking them over flames on an open-air charcoal barbeque.
Botanica focuses on imaginative dishes that champion healthy ingredients prepared in a way that retains their goodness and enhances their natural flavour.
In addition to the garden’s harvest, guests can expect to see the likes of wild, hand-caught Maldivian rock lobster, pickled wakame, buttermilk, sea succulents and finger limes on the plate.
“Botanica is a really exciting place to cook –I love that the restaurant is in the middle of the island, the space has a jungle-like feel as it is surrounded by established organic vegetable and herb gardens, which supply produce that we integrate in the menu,” said Savage.
