Coming to join the team at its pristine shores is Chef Rohit Pushpavanam, the new executive chef of the luxury resort. Boasting a career spanning more than 20 years, Chef Rohit has helmed the kitchens at multiple metropolises in the world including India, Dubai, Abu Dhabi and the Maldives.
At Alila Kothaifaru Maldives, Rohit would be leading the resort’s culinary department, deploying his extensive skills and expert knowledge to curate the most exquisite dishes to suit guest palates. Being quite familiar with the Alila Brand after working in Alila Diwa Goa, Rohit upholds the core pillar of sustainability at Alila, creating high-quality culinary delights using sustainably grown or sourced ingredients.
Rohit’s career took flight in India after he completed his Diploma in Hotel Management from IHM Mumbai. Since then, he has worked in well-renowned hotels around the world, serving different positions as his career progressed. This includes the prestigious One&Only Reethi Rah Maldives, Hilton Abu Dhabi and Cheval Blanc Randheli Maldives. Prior to joining the team at Kothaifaru, Rohit had been the Executive Chef at Alila Diwa Goa, India where he manned the kitchens for 5 years.
With a strong belief in the zero-waste policy, Rohit puts into place dining practices that reduce the potential for waste. Instead of buffet-style dining, the resort opts for daily rotating a la carte breakfast menus and set dinner menus, giving guests the chance to still savour a diverse range of delectable options while keeping food waste at a minimum.
Apart from the gastronomical moments enjoyed at Alila Kothaifaru Maldives, guests are also provided the rare opportunity to learn about Maldivian cuisine and culture as per the Alila Experiences. Chef Rohit would be guiding guests on a journey to tap into the secrets of Maldivian Cuisine in an engaging cooking class. During the class, guests will prepare traditional Maldivian dishes Kopee Fai Mashuni and try their dishes in a scenic ambience, unlocking the flavours of Maldives.
