This October, The St. Regis Maldives Vommuli Resort is set to host a special culinary event as renowned Indian chef Surjan Singh, known affectionately as Chef Jolly, begins a two-month pop-up residency from mid-October to mid-December 2025. Timed to coincide with the Diwali season, the event brings a vibrant celebration of Indian cuisine to the serene shores of Dhaalu Atoll.

Chef Jolly, a well-known face from MasterChef India, brings over 30 years of experience to this exclusive island collaboration. His signature approach—blending rich royal heritage with beloved comfort food—shines through a menu inspired by his travels and deep culinary roots across the Indian subcontinent.

Guests will be treated to dishes like Lamb Ghee Roast on Malabar Bread Tacos, Cafreal Tiger Prawns, and his famed Butter Chicken. Accompaniments include fragrant biryanis, hand-rolled breads, house-made chutneys, and expertly toasted spices. A curated cocktail list adds a modern twist, featuring Indian-inspired drinks such as The Great Indian and Imli Margarita, alongside a fine selection of wines and low-ABV options.
