That is exactly why Chef Carlo Di Nunizo decided to pursue a career in the kitchen – as a firm believer that cooking is the only job in the world that brings out positive emotions in others. The joy and emotions on the faces of those who experience his culinary adventures react to well-made dishes, is his drive as a chef.
Although originally from Torino, Italy, and inspired by the Italian palate, Chef Carlo has made people happy through food in the countries: Switzerland, France, Romania, Egypt, England, and Portugal before ending up here in the paradisiacal islands of the Maldives. He is bringing with him an accomplished and impressive skillset and over 32 years of food experience, expertise, and management as an Executive Chef at Hideway Beach Resort & Spa. His goal in this capacity is to wow and impress the resort’s guests with his many culinary delights and to take dining at Hideaway up to the next level.
During his culinary adventures overseas, Chef Carlo has worked in international hotel chains and Michelin Star restaurants while thriving to better himself and advancing with mantra to bring joy to even the pickiest and hard-to-please customers.
Chef Carlo firmly believes that there are many similarities between Italian and Maldivian cuisine that seem to intersect the most in seafood-based meals. It is not really surprising considering that an abundance of fresh catch from the tropical seas of the Maldives and a variety of local materials are used in the cooking process.
When in Rome, do as the Romans do, but Chef Carlo is in the Maldives now and he is going to apply the same formula here. To do so, he never ceased to stop learning and directly hears from local chefs about the way of the craft. He returns this favor by imparting his own knowledge and together – they create amazing dishes for the guests. A little birdie tells us that as a team, countless recipes are in the works!
Shaped like a crescent, Hideway Beach Resort & Spa is located in the northern-most point of the Maldives and is located in an environment where it is favorable to fish and farm. This allows the resort to source fresh produce from its very own gardens and farm in addition to affiliated farms in nearby islands to create the best dishes.
