
Sheraton Maldives Full Moon Resort & Spa has announced the appointment of Daniel Mac Samson as its new Director of Food & Beverage, signalling a refreshed approach to its culinary programme. With over 15 years of experience across India, the Maldives, Qatar and Bali, Daniel has overseen multi-restaurant operations, concept creation, pre-openings and immersive dining experiences at leading hotels and resorts.
Daniel began his career behind the bar at Taj Hotels Resorts & Palaces in Chennai before moving into leadership roles at luxury properties throughout the region. Returning to the Maldives, he brings a strong track record in launching new concepts, managing diverse outlets and weaving global food trends with local traditions.
“I am excited to create dining experiences that tell a story,” said Daniel. “From destination setups and themed pop-up nights to seasonal menus, each concept will celebrate a local ingredient, a cultural tradition or a global trend leaving every guest with a lasting memory.”
Sustainability underpins his vision, with an emphasis on sourcing ingredients from island farms, the resort’s Furana Organic Garden, and local fishermen to highlight the Maldives’ authentic flavours. He also aims to nurture creativity among his teams through collaborative tastings, idea sharing and hands-on involvement in dishes and service.
General Manager Greg Allan said Daniel’s international expertise and commitment to sustainability will enhance Sheraton Maldives’ premium dining experiences and deepen their connection to Maldivian culture and environment.
