Under the resort’s acclaimed Guest Chef Series, The St. Regis Maldives Vommuli Resort is preparing to welcome Chef Christophe Marleix who would be taking residency at the resort from April 6th -7th 2023. Chef Christophe is the Executive Chef of the world-renowned CORD by Le Cordon Bleu – a globally leading network of Culinary Arts and Hotel Management institutes.
Le Cordon Bleu’s transformative heritage spans over 125 years and CORD by Le Cordon Bleu is a unique dining concept incepted in the heart of London. It is also the first restaurant from the prestigious network to open in England’s capital. The menus are masterfully crafted by an expert chef team, spearheaded by Christophe Marleix and delivered with unparalleled attention to detail and a focus on delivering the best culinary experiences.
During his residency at the resort, Chef Christophe will deliver an exclusive signature menu at lunch and dinner for hotel guests. The sumptuous 6-course menu will pay homage to local produce and use carefully picked ingredients to create an authentic and sensational dining experience for all guests. His appetizing creations can be enjoyed while delighting in one of the paradisial settings at the resort from dazzling seascapes, coral beaches and lush greenery.
Some of the dishes featured in Chef Christophe’s 6-course menu include delicious tempura vegetables, lentil hummus and crushed herbs and pressed chicken with bell paper drizzled in shellfish sauce. Delectable plates of tuna tartar with confit shallots, avocado, mango and coriander as well as mouth-watering seafood stew served with coconut, lime and ginger will also tantalize the palates during the gastronomical affair.
Chef Christophe has extensive experience in curating fine dining experiences having served various positions at esteemed culinary establishments around the world. Before joining CORD by Le Cordon Bleu, he was the Executive Head Chef of The Grill at Dorchester Hotel, a property under Alain Ducasse’s Dorchester Collection. He has also filled in the same position at Foile and helmed the role of Executive Sous Chef at Restaurant La Cour Jardin.
Chef Christophe has even undertaken roles in numerous Michelin-starred restaurants throughout his career. This includes serving as the Chef de Cuisine at three Michelin-starred Banqueting Plaza Athénée in Paris, Chef de Partie at two Michelin-starred fine dining restaurant Jean Paul Jeunet in Jura, and Commis Chef to Chef De Partie at the two Michelin-starred Restaurant Nicolas Le Bec at five-star hotel La Cour des Loges in Lyon.
As part of his visit, Chef Christophe will also spend a day at the Maldives National University where he will share his expertise and insights with students. With over two decades of experience in Michelin-starred restaurants and luxury hotels, Chef Christophe is expected to bring a wealth of knowledge and skill to the classroom. During the visit, he will share his passion for cooking and his commitment to using fine ingredients, giving students a unique perspective to observe and learn from a world-famous chef.
The initiative pays homage to Marriott International’s Serve 360 program, which aims to create positive social and environmental impact. In line with Serve 360’s goals, the collaboration will provide valuable resources, educational opportunities, mentorship, and more for local students. The Marriott team is committed to making a difference in their community and supporting the next generation of leaders.
Apart from this, Marriot Bonvoy members will also have the exciting opportunity to bid on an exclusive lunch along with hands-on experience to learn directly from Chef Christophe. The highlight would be a 3-course menu featuring mahi-mahi gravlax, grilled onions, dill and chilli sauce, cod, squid ink béarnaise, mixed courgettes, and a dark chocolate trilogy. Curated for two, the experience will also include two nights in a Panoramic Overwater Villa with pool, daily breakfast at ALBA restaurant, a 60-minute signature Iridium Touch spa treatment for two at the award-winning Iridium Spa and a private guided snorkeling tour of the house reef.
