The luxury resort, The Westin Maldives Miriandhoo has announced the appointment of Jorge Colazo as their new Executive Chef. Jorge brings almost two decades of experience to the shores of The Westin Maldives, having worked with numerous kitchens around the world including Michelin-star restaurants.
A passionate virtuoso of culinary arts, Jorge’s insightful knowledge extends to various other markets - a skill he will be availing to create and elevate gastronomical experiences at The Westin Maldives Miriandhoo Resort. His dedicated cuisine is characterized by its freshness and innovative touches as well as the elaborate execution of its products. As such, Jorge’s cuisine captures the essence of his experiences flawlessly and is celebrated for bringing out the finest in local and international dishes.
Hailing from Ushuaia, Argentina, Jorge completed his culinary studies at the Argentine Institute of Gastronomy and Le Corden Bleu Paris. After graduating, Jorge was fuelled by his passion for experiencing new cultures and cuisines and set off to explore the world as a globetrotter. His extensive travelling helped him expand and improve his skillset tremendously and in the process curate his own signature cooking style.
His career took him from Argentina to Spain and to Mexico and the United States, where he worked at several top-tier restaurants. This included the famed three-Michelin star Arzak in San Sebastian, Asiate in New York and the two-Michelin star restaurant, Aquavit in New York. In 2017, Jorge shifted to London to step into the role of Executive Sous Chef at Mandarin Oriental Hyde Park. He then went on to serve as the Head Chef of Aster Restaurant in Victoria and later took up the same position at Aquavit, London as well. His first brush with The Westin Hotels & Resorts came in 2021 when Jorge joined the pre-opening team at The Westin London City.
In his free time, Jorge enjoys sports, travelling and of course, meeting people of different cultures and backgrounds.
