But recently, in a video by CNN Travel, a local chef, one of the most popular chefs in the country, has revealed that it’s his dream to put Maldives cuisine on the global map.
Abdullah Sobah currently does his magic at Soneva Fushi’s Out of the Blue restaurant as the Chef de Cuisine. “My passion is just creating nice Maldivian fusion things to present to our customers. So that’s why I love to just create always.” Out of the Blue serves Asian and International cuisines including Vietnamese, Japanese and Indonesian cuisine, salads, grilled meats and seafood.
Sobah’s culinary inspiration comes from his past. Back when he was a child, he used to help his mother cook the fish that his father would bring home. In the Maldives, this was part of the culture: the husband goes to get the fish and the wife prepares a delicious meal for dinner. “So that day onwards I always think, always in my mind, I’m going to be the best chef in the Maldives.”
For Sobah, the ingredients and the products that go into the food are very important. According to him, he uses the freshest, healthiest ingredients in his Maldivian food.
