One of the most well-known bakeries in the country has collaborated with one of the most luxurious resorts to introduce a very unique Italian recipe. Ginger Bakes’ very first vegetarian recipe, the classic Italian spinach tortelloni with a vegetarian twist has aroused the food lovers.
Tortelloni are stuffed pasta, the same shape as tortellini, but larger. Usually, they are stuffed with ricotta cheese and leaf vegetables. If you love Italian cuisines, then this dish is sure to be one of your favorites! But what’s so special about this collab between Ginger Bakes and LUX* South Ari is that it has created a vegetarian recipe.
Although most of the fresh pastas call for eggs, this twisted tortelloni recipe comes with a vegan spinach pasta dough, which won’t let you miss the egg or versatility of traditional pasta in this. All you need is a combination of all-purpose flour, samolina, spinach pulp, pinch of salt and some olive oil.
“I learnt that it's less about the ingredients and more about the process of making pasta from scratch that brings out the beauty in it!” says Shaadhny, the baker behind Ginger Bakes. She revealed how therapeutic it was for her when kneading the dough and making the home-made pasta.
