Anuj Singh, who is prepared to take visitors on a culinary adventure to remember, has been named the new executive chef at Cora Cora Maldives, as announced this summer. Chef Anuj, who was inspired by the freedom ethos, thinks that good food not only fills the stomach but also the soul and makes people feel good.
Since he was a young child, Chef Anuj has been fascinated by cooking. He used to frequently visit his father's restaurant in the lovely mountain town of Dehradun in northern India. He was astounded by the flawless presentation of every dish, which motivated him to train as a chef and hone his own presentation abilities in order to perfect the art of cooking.
Chef Anuj is a qualified culinary expert with more than 20 years of experience in both Asian and international cuisine. He has experience working across the nation in a variety of settings, including fine dining and Italian establishments, and has worked with renowned chefs Pitamber and Roberto Mancini.
He was Executive Sous Chef at the One & Only Reethi Rah and was responsible for managing a team of 105 chefs and six outlets. He later worked in the Sea Food Restaurant at the Le Meridien hotel in the United Arab Emirates before relocating to the Maldives, where he spent the next 13 years working his way up from commis chef to executive chef.
Keeping up with culinary trends and discovering more about various cultures' eating habits captivates Chef Anuj. He has observed the dietary trends over the course of his life, including veganism, the use of organic ingredients, and the creation of plant-based dishes. This has inspired him to come up with inventive recipes so that there are as many options as possible for the more health-conscious or dietary-restricted guests in addition to dishes that taste delicious.
“I have found working in the Maldives has its challenges in the form of having to import many of the ingredients from the mainland and having a limited time frame to use them whilst they are fresh. One of the most exciting prospects of working at Cora Cora Maldives is sourcing herbs, spices, fruits, and vegetables directly from the Chef’s Garden.” Expressing his enthusiasm over this new working adventure is Chef Anuj!
